You are seeing a limitation of the Outlook LDAP addressbook provider.

Typically you need to do the following:

Enter part of the name in the To field and click on the "Lookup names" icons. 
Outlook will propose possible completions.

The same applies for invitiations etc.

In short the Outlook LDAP addressbook provider offers a search and completion 
interface but no browsing interface.

For browsing the LDAP addressbook either use the workaround which you already 
proposed or use a 3rd party tool.
